This is a blend of three varieties of quinoa: white, red, and black. The different colors offer a varied texture and visual appeal when cooked. White quinoa is the mildest and cooks the quickest. Red quinoa holds its shape well and has a slightly firmer texture. Black quinoa is also firm and has a subtly earthy flavor.
This versatile grain can be used in a variety of dishes, from breakfast bowls to side dishes and salads.
To prepare, rinse the quinoa thoroughly under cold water to remove any saponins, which can cause a bitter taste. Combine one part quinoa with two parts liquid (water or broth) in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes, or until the liquid is absorbed and the quinoa is tender. Let it stand, covered, for 5 minutes before fluffing with a fork. This blend is excellent served warm or cold.
Unlike single-variety quinoa, this tricolor blend offers a more complex visual presentation and a range of textures. The different types of quinoa cook slightly differently, contributing to a more interesting mouthfeel than a uniform grain. The flavor profile is also a bit more nuanced due to the distinct characteristics of each color.
Store any uncooked, leftover quinoa in an airtight container in a cool, dry place. Once cooked, refrigerate leftovers in a sealed container for up to 3-4 days. It can be reheated or enjoyed cold in salads.
