Kroger White Corn Meal
What it is
This is a finely ground corn product made from dried white corn kernels. It has a slightly coarser texture than flour, providing a distinct mouthfeel in cooked dishes. The white corn variety offers a milder flavor compared to yellow corn meal. It is a pantry staple for many home cooks seeking to add a corn-forward element to their creations. Its versatility makes it suitable for a wide range of culinary applications.
How people cook with it
Corn meal is a versatile ingredient that can be used in both sweet and savory dishes. It adds texture and a subtle corn flavor to baked goods and fried items.
- Breading for fried foods
- Cornbread and muffins
- Thickening agent for stews
- Polenta base
Corn meal can be incorporated into recipes in several ways. For baking, it is often mixed with flour to create a tender crumb and a slightly gritty texture, as seen in cornbread or muffins. When used as a coating for fried items like fish or chicken, it helps create a crispy exterior. It can also be cooked with liquid to form a creamy porridge, known as polenta or grits, which can be served as a side dish or a base for other toppings. Some cooks use it to thicken sauces or gravies, adding a subtle corn essence.
How it differs from similar foods
White corn meal differs from yellow corn meal primarily in the color of the corn used, which results in a lighter finished product. It also tends to have a milder, less pronounced corn flavor compared to the sometimes sweeter taste of yellow corn meal. Its texture is generally comparable to yellow corn meal.
Who it is for
Home cooks who enjoy traditional Southern cooking and baking often use white corn meal.
How to keep the rest
To maintain freshness, store the remaining corn meal in its original packaging or an airtight container. Keep it in a cool, dry place away from direct sunlight and moisture. Proper storage will prevent it from becoming stale or absorbing odors from other pantry items.
