This is a block of extra firm tofu, a soy-based food product. It is made from soybeans, water, and a coagulant. The extra firm variety has had most of its water pressed out, giving it a dense texture. This makes it a versatile ingredient for many dishes.
Tofu is a staple in many cuisines, particularly Asian cooking. Its neutral flavor allows it to absorb the tastes of marinades and sauces.
Before cooking, it is often beneficial to press the tofu to remove excess water. This can be done using a tofu press or by wrapping it in paper towels and placing a heavy object on top. Once pressed, it can be cut into cubes, slices, or crumbles. It readily accepts marinades, which can be applied for at least 30 minutes, or longer for deeper flavor. Tofu can then be pan-fried, baked, grilled, or added directly to stews and curries.
Extra firm tofu has a much denser and chewier texture compared to silken or soft tofu. This lower moisture content means it holds its shape better when cooked and is less likely to crumble. It is ideal for dishes where you want the tofu to remain intact.
After opening, store any unused tofu in an airtight container submerged in water in the refrigerator. Change the water daily. It should be used within a few days for best quality.
