Tofu de Genève is a firm tofu made from soybeans. It is a versatile ingredient with a neutral flavor that absorbs the tastes of other foods. This tofu is pressed to remove excess water, making it suitable for a variety of cooking methods.
This firm tofu can be prepared in many ways, from simple pan-frying to baking or adding to stews.
Before cooking, it is often beneficial to press the tofu to remove as much water as possible. This can be done using a tofu press or by wrapping it in paper towels and placing a heavy object on top. Once pressed, it can be cut into desired shapes. For a crispy texture, coat the pieces in cornstarch or flour before pan-frying or baking. It readily takes on marinades, so soaking it for at least 30 minutes before cooking can infuse it with flavor. It can also be blended into sauces or dips.
Compared to silken tofu, firm tofu has a much denser texture and holds its shape better when cooked. This makes it ideal for dishes where you want distinct pieces of tofu, rather than a creamy consistency.
Refrigerate any unused portion of this tofu in an airtight container, submerged in water. Change the water daily. It is best consumed within a few days of opening.
