Tempeh is a traditional Indonesian food made from fermented soybeans. The fermentation process binds the soybeans into a firm, cake-like block. This process also gives tempeh a distinct, earthy flavor and a slightly nutty aroma. It is a versatile ingredient that can be prepared in many ways. Its firm texture makes it a good substitute for meat in various dishes.
It can be incorporated into a wide range of meals.
Before cooking, tempeh is often steamed for about 10 minutes. This step helps to soften the block and reduce any slight bitterness from the fermentation. After steaming, it can be cut into cubes, strips, or crumbled. Many people choose to marinate tempeh to infuse it with flavor before grilling, baking, or pan-frying. It absorbs marinades well, making it adaptable to various cuisines. It can also be added to stews, chili, or used as a filling for wraps and sandwiches.
Unlike tofu, which is made from soybean curds, tempeh uses whole soybeans. This difference results in a firmer, chewier texture and a more pronounced, earthy flavor profile. The fermentation process also contributes to its unique characteristics.
Unopened tempeh can be stored in the refrigerator until the best-by date. Once opened, it should be tightly wrapped and consumed within a few days. It can also be frozen for longer storage, which may slightly alter its texture.
