Before cooking, it is often beneficial to press the tofu to remove excess water. This can be done using a tofu press or by wrapping it in paper towels and placing a heavy object on top. Once pressed, it can be cut into desired shapes. Pan-frying or baking until golden brown creates a pleasant texture. It can also be added directly to simmering dishes where it will soften and absorb the surrounding flavors.
Compared to silken tofu, firm tofu has a denser texture and contains less water. This makes it more suitable for applications where the tofu needs to maintain its structure, such as in stir-fries or when being fried.
Refrigerate any unused portion of the tofu. It is best to store it submerged in water in an airtight container. Change the water daily to keep it fresh. It should be used within a few days of opening.
