Before cooking, it is often beneficial to press the tofu to remove excess water, even though this variety is already super firm. This can be done using a tofu press or by wrapping it in paper towels and placing a heavy object on top. Once pressed, it can be cut into cubes, slices, or crumbles. Marinating tofu allows it to absorb flavors. It can then be pan-fried, baked, grilled, or added directly to sauces and stews. For a crispy texture, consider coating it in cornstarch before frying or baking.
Super firm tofu is denser and holds its shape better than silken or regular firm tofu. This makes it less likely to crumble when handled or cooked, especially in dishes where texture is important.
Once opened, store any unused tofu in an airtight container submerged in water in the refrigerator. Change the water daily. It should be used within a few days for optimal freshness.
