To prepare sorghum, rinse the grains thoroughly under cold water. For every cup of sorghum, use two cups of liquid, such as water or broth. Bring the liquid to a boil, then reduce heat, cover, and simmer for about 45 to 60 minutes, or until the grains are tender and have absorbed most of the liquid. The texture should be chewy. You can also cook it in a rice cooker. Once cooked, it can be used immediately or stored for later use in various recipes.
Unlike some other grains, sorghum has a naturally chewy texture that holds up well in dishes. Its mild flavor makes it adaptable to many culinary applications.
Store any unused cooked sorghum in an airtight container in the refrigerator for up to 3-4 days. For longer storage, cooked and cooled sorghum can be frozen in a freezer-safe container for up to 2 months. Uncooked sorghum should be kept in its original packaging in a cool, dry place.
