This is a package of soft tofu made using nigari as a coagulant. Tofu is a soy-based food product made by curdling soy milk and then pressing the resulting curds into blocks. The use of nigari, a natural brine left after salt extraction from seawater, contributes to its smooth consistency and subtle flavor.
Soft tofu is ideal for dishes where a smooth, yielding texture is desired. It can be incorporated into soups, sauces, or blended into creamy preparations.
To use, gently drain the tofu from its packaging. Because of its soft texture, it should be handled with care to avoid breaking it apart. It can be cubed and added to simmering soups towards the end of cooking, or it can be mashed and blended into sauces for a creamy base. For desserts, it can be pureed with sweeteners and flavorings to create custards or mousses. It absorbs flavors well, making it a good vehicle for other ingredients.
Compared to firm or extra-firm tofu, soft tofu has a much higher moisture content and a more delicate, almost pudding-like texture. This makes it unsuitable for frying or grilling, as it will not hold its shape. Its creaminess, however, makes it perfect for applications where a smooth consistency is key.
After opening, store any unused portion of the tofu in an airtight container submerged in water in the refrigerator. Change the water daily to maintain freshness. It is best consumed within a few days of opening.
