These are thin, translucent wrappers made from rice flour, tapioca starch, salt, and water. They are a staple in many Asian cuisines, particularly Vietnamese. When dry, they are brittle and stiff. However, they become pliable and soft when briefly dipped in warm water, making them ideal for wrapping a variety of fillings.
Rice paper is a versatile ingredient used for creating fresh, uncooked rolls or for frying.
To prepare rice paper for wrapping, have a shallow dish of warm water ready. Dip one wrapper into the water for about 15-30 seconds, just until it becomes soft and flexible. Be careful not to over-soak, as it can become too sticky and tear easily. Lay the softened wrapper flat on a clean surface and arrange your desired fillings (such as cooked shrimp, vermicelli noodles, fresh herbs, and vegetables) near the bottom edge. Fold the bottom edge over the filling, then fold in the sides, and finally roll it up tightly from the bottom. Serve immediately with your favorite dipping sauce.
Its texture when fresh is delicate and slightly chewy, while fried versions become wonderfully crisp and light.

Store unopened packages in a cool, dry place away from direct sunlight. Once opened, ensure the package is sealed tightly to prevent the wrappers from drying out. If they do become too dry, they may be difficult to rehydrate properly.
