Wo Chong
This is a block of organic tofu made from soybeans. It has a firm texture, meaning it holds its shape well when cooked. It is made by coagulating soy milk and then pressing the resulting curds into solid blocks. This particular tofu is certified organic, indicating it is produced without synthetic pesticides or fertilizers.
Firm tofu is excellent for dishes where you want the tofu to retain its structure and absorb flavors.
Before cooking, it is often beneficial to press the tofu to remove excess water. This can be done using a tofu press or by wrapping the block in paper towels and placing a heavy object on top. Once pressed, you can cut it into desired shapes like cubes, triangles, or slabs. Firm tofu holds up well to high-heat cooking methods such as pan-frying, baking, or grilling. It readily absorbs marinades, making it a great canvas for a variety of flavors.
Compared to silken or soft tofu, firm tofu has a much denser texture and lower water content. This makes it less likely to crumble during cooking and better suited for applications where a distinct shape is desired, unlike softer varieties which are often blended into sauces or desserts.
After opening, store any unused portion of the tofu submerged in water in an airtight container in the refrigerator. Change the water daily to keep it fresh. It is best to consume the leftover tofu within 3 to 5 days.
