Ota Tofu
This is a block of medium-firm tofu, a versatile ingredient made from soybeans. It has a smooth texture and a mild flavor that readily absorbs other tastes. Medium tofu holds its shape better than silken varieties but is still soft enough to be easily cut and incorporated into various dishes.
Medium tofu is a staple in many kitchens, used in both savory and sweet preparations. Its adaptability makes it suitable for a wide range of cooking methods.
Before cooking, it is often beneficial to press medium tofu to remove excess water. This can be done using a tofu press or by wrapping the block in paper towels and placing a heavy object on top. Once pressed, it can be sliced, diced, or crumbled. It can then be pan-fried until golden, baked, added to simmering broths, or incorporated into sauces. Its neutral taste makes it an excellent canvas for marinades and spices, allowing it to take on the flavors of other ingredients.
Medium tofu offers a balance between the delicate texture of silken tofu and the firm structure of extra-firm varieties. It is softer than firm tofu, making it easier to mash or blend, but it still retains enough integrity to be cubed and sautéed without falling apart completely.
Home cooks and professional chefs alike utilize medium tofu for its flexibility in diverse culinary applications.
After opening, store any unused portion of the tofu submerged in water in an airtight container in the refrigerator. Change the water daily to keep it fresh. It is best to use the remaining tofu within 2 to 3 days.
