Ota Tofu
This is a block of firm tofu, a soy-based food product made from condensed soy milk that is pressed into solid white blocks. It has a dense texture and a mild, neutral flavor, making it a versatile ingredient in many dishes. It is a staple in vegetarian and vegan cooking, but also enjoyed by many others for its adaptability. The pressing process removes more water than silken or regular tofu, resulting in a firmer consistency.
Firm tofu is excellent for dishes where you want the tofu to hold its shape. It can be cubed, sliced, or crumbled.
Before cooking, it is often recommended to press the firm tofu to remove excess water. This can be done using a tofu press or by wrapping it in paper towels and placing a heavy object on top for at least 30 minutes. Once pressed, it can be cut into desired shapes. For a crispy exterior, you can coat it in cornstarch or flour before pan-frying or baking. Its ability to absorb marinades makes it a great base for many flavors.
Firm tofu is denser and holds its shape better than softer varieties like silken or regular tofu. This makes it ideal for cooking methods that require the tofu to remain intact, such as cubing for stir-fries or baking. Softer tofus are better suited for blending into sauces or soups.
Unopened packages of firm tofu can be stored in the refrigerator until the expiration date. Once opened, transfer any unused tofu to an airtight container filled with water and refrigerate. Change the water daily. It should be used within a few days of opening.
