This is a block of tofu that has been pressed to remove most of its water content. It has a dense, solid texture, making it a versatile ingredient in many dishes. The pressing process results in a firmer product compared to silken or soft tofu. It is a plant-based food made from soybeans.
Extra firm tofu is excellent for dishes where you want the tofu to hold its shape. It can be a satisfying substitute for meat in many recipes.
Before cooking, it is often beneficial to press the tofu further to remove any remaining moisture. This can be done using a tofu press or by wrapping it in paper towels and placing a heavy object on top. Once pressed, it can be cut into cubes, slices, or crumbles. It readily absorbs marinades, making it ideal for flavorful preparations. Pan-frying, baking, or grilling are common methods to achieve a desirable texture, often resulting in a crispy exterior.
Extra firm tofu is the densest type of tofu available. This makes it less likely to fall apart during cooking compared to softer varieties. Its lower water content means it browns and crisps up more easily when fried or baked.
After opening, store any unused portion submerged in water in an airtight container in the refrigerator. Change the water daily to keep it fresh. It is best used within a few days of opening.
