Before cooking, it is often beneficial to press the tofu to remove excess water. This can be done using a tofu press or by wrapping it in paper towels and placing a heavy object on top. Once pressed, it can be cut into cubes, slices, or crumbles. It absorbs marinades exceptionally well, so marinating it for at least 30 minutes before cooking is recommended. It can then be pan-fried, baked, grilled, or added directly to stews and curries. For a crispy texture, consider coating it in cornstarch before frying or baking.
Extra firm tofu is the densest type of tofu. It contains less water than firm, medium, or silken tofu. After opening, store any unused tofu in an airtight container submerged in water in the refrigerator. Change the water daily. It should be used within 3 to 5 days for optimal freshness. Do not freeze the tofu in its original packaging.
