Before cooking, it is often beneficial to press the tofu to remove excess water. This step helps it achieve a better texture and allows it to absorb marinades more effectively. You can press it by wrapping it in paper towels and placing a heavy object on top for at least 30 minutes. Once pressed, it can be cut into cubes, slices, or crumbles. It can then be pan-fried, baked, grilled, or added directly to soups and stews.
Extra firm tofu is the densest type of tofu. It contains less water than silken or soft tofu, which are much more delicate and creamy. This lower water content means extra firm tofu holds its shape better when cooked, making it ideal for frying or grilling where a firm texture is desired.
After opening, store any unused portion of the tofu submerged in water in an airtight container in the refrigerator. Change the water daily to keep it fresh. It is best to use the remaining tofu within 3 to 5 days.
