This is a block of tofu that has had most of its water pressed out. It has a dense texture and holds its shape well when cooked. This makes it a versatile ingredient in many dishes. It is a staple for many home cooks looking for plant-based options.
Extra firm tofu is a fantastic ingredient for absorbing flavors and adding substance to meals. It can be prepared in many ways, from crispy fried pieces to marinated and baked slabs.
To prepare extra firm tofu, it is often best to press it further to remove any remaining water. This can be done using a tofu press or by wrapping the block in paper towels and placing a heavy object on top for at least 30 minutes. Once pressed, it can be cut into cubes, slices, or crumbles. It readily absorbs marinades, making it ideal for adding deep flavor. Pan-frying, baking, or air-frying will create a satisfyingly firm and sometimes crispy exterior.
Compared to silken or soft tofu, extra firm tofu has a much denser and more solid texture. This lower water content means it holds its shape better during cooking and is less likely to crumble. It is also more suitable for frying or grilling applications where a firm structure is desired.
After opening, store any unused portion of the extra firm tofu submerged in water in an airtight container in the refrigerator. Change the water daily to keep it fresh. It is best used within a few days of opening.
