Whole Foods Extra Firm Tofu

What it is

This is a block of tofu that has been pressed to remove most of its water content. It has a dense, solid texture and holds its shape well when cooked. Tofu is made from soybeans and is a versatile ingredient in many cuisines.

How people cook with it

Extra firm tofu is ideal for recipes where you want the tofu to maintain its structure and not crumble. It absorbs marinades and flavors beautifully.

  • Cubed and pan-fried
  • Marinated and baked
  • Crumbled for scrambles
  • Added to stir-fries

Before cooking, it is often beneficial to press the extra firm tofu further to remove any remaining water. This can be done using a tofu press or by wrapping it in paper towels and placing a heavy object on top for at least 30 minutes. Once pressed, it can be cut into cubes, slices, or crumbles. It can then be pan-fried until golden brown, baked, grilled, or added directly to soups and stews. Marinating the tofu before cooking allows it to absorb flavors more deeply.

How it differs from similar foods

Compared to silken or soft tofu, extra firm tofu has a much lower water content and a denser, more substantial texture. This makes it less likely to break apart during cooking and better suited for applications where a firm, chewy bite is desired.

How to keep the rest

After opening, store any unused portion of the extra firm tofu submerged in water in an airtight container in the refrigerator. Change the water daily. It should be used within 3 to 5 days.
